Chef Shingo Suzuki’s Restaurant to Be Further Upgraded for the 2026 Green Season: Reservations Open Sunday, March 15 at 10:00 AM
News

Thank you very much for your patience.
The 2026 Green Season is scheduled to run from Monday, June 1 to Saturday, October 31, and reservations will open on Sunday, March 15 at 10:00 AM.
This year, FIELD SUITE HAKUBA will focus on further enhancing our restaurant led by Chef Shingo Suzuki, which has been warmly received by many of our guests.
Details of this year’s initiatives are summarized below, and we would be delighted if you could make plans to visit us.
We look forward to welcoming you to Kitaone Kogen Highland.
1. Further upgrades to the restaurant led by Chef Shingo Suzuki
Restaurant-only reservations are now also available.

FIELD SUITE HAKUBA has long offered course meals featuring Nagano-grown ingredients paired with Nagano wines. This season, in addition to this popular pairing course, Chef Suzuki will introduce a new course showcasing the delicate Italian ingredients and wine pairings cultivated during his six years of training in Italy. Sommelier Sho Yoshihira will handle the pairings for both courses.
Additionally, for guests who have found our course meals a bit too generous in volume, we will also offer a lighter Nagano-sourced course option with fewer dishes.
Furthermore, while our top priority remains accommodating our lodging guests, we will accept reservations for dining only on selected days when restaurant seating is available. These reservations are available for both lunch and dinner and include complimentary transportation within Hakuba Village. Reservations can be made starting one month in advance.
[New Dinner Options]
A pairing dinner course featuring Chef Suzuki’s recommended Italian specialties
A course featuring Nagano Prefecture ingredients, paired with Nagano wines, for those who prefer our previous menu

2. Expanding the number of rooms offered to seven. Lunch and the Happo-ike tour, previously included in the price, are now optional.

Due to COVID-19, we limited stays to only four rooms, half of our full capacity. However, as circumstances have changed, we will return to full operations starting with the 2026 green season.
In addition, since many guests have commented that they are unable to eat lunch after enjoying a full-course dinner the previous day and a hearty Field Breakfast, the second-day lunch and lunch box—previously included as part of our all-inclusive package—will now be offered as optional add-ons. The Happo-ike tour, which was previously included in the price, will likewise be offered as an optional extra.
3. In August, only the “Outdoor Cabin JYUBAKO Suite” with an attached tent room will be available for booking.

The summer of 2025 brought an unseasonably long stretch of extremely hot days. Even at Kitaone Kogen Highland, known for its cool mornings and evenings, we experienced several days of intense daytime heat. On those days, we had to ask guests staying in our tent suites—which are directly exposed to the outside air—to move to the Kitaone Kogen Terrace for their comfort, which we truly regretted.
Therefore, in August 2026, we will offer only two rooms: the “Outdoor Cabin JYUBAKO Suite,” featuring a fully enclosed, air-conditioned cabin with an attached tent room on a wooden deck, accommodating up to four guests. We hope this arrangement will allow you to enjoy a more private and comfortable stay.
4. Kids' Day is here again!

FIELD SUITE HAKUBA does not normally accommodate children under the age of 10, as our main purpose is to provide a quiet and relaxing stay surrounded by nature. However, due to numerous requests from families wishing to stay with us, we have offered “Kids’ Day” stays since the 2023 Green Season. On these designated days, children under the age of 10 are welcome to stay with their parents or guardians, sharing a bed.
Kids’ Day stays will also be held on the following dates in 2026.
[2026 Green Season Kids’ Day]
- Saturday, June 27
- Sunday, June 28
- Saturday, July 25
- Sunday, July 26
- Saturday, August 8
- Sunday, August 9
Additional dates may be added upon request.
5. Themed plans such as winery visits and yoga programs will also continue

Last December, Sommelier Sho Yoshihira’s wine pairing guidebook, Enjoying the Logic: A Textbook on Wine Pairing (Asahi Shimbun Publications)*, was published. We are also planning themed experiences, such as winery visits guided by Sommelier Yoshihira and the popular “Yoga & Glamping RETREAT” series, which has been well received since 2023. Stay tuned!
