A Taste of What’s New This Green Season

FIELD SUITE HAKUBA offers a full-course dinner featuring regional ingredients, and we are always on the lookout for new flavors to further delight our guests.
Starting from the 2025 Green Season, which began on June 1, we’ve introduced a new selection of delicious cheeses.
These come from Atelier de Fromage, a handmade cheese atelier in Tomi City, Nagano Prefecture. Since its founding in 1982, the atelier has been dedicated to using the finest ingredients and traditional French cheese-making techniques. In 2015, their blue cheese was awarded Super Gold, the highest honor at the Mondial du Fromage, an international cheese competition held in Tours, France.
The tart in the photo was created by Chef Shingo Suzuki as an aperitif snack, featuring the atelier’s blue cheese and smoked hard cheese. Their yogurt is also used in our Field Breakfasts — we hope you’ll enjoy discovering these delightful additions!
