Since its founding in 1982, the atelier has been dedicated to using the finest ingredients and traditional French cheese-making techniques. In 2015, their blue cheese was awarded\u00a0<\/span><b data-stringify-type=\"bold\">Super Gold<\/b><span>, the highest honor at the\u00a0<\/span><i data-stringify-type=\"italic\">Mondial du Fromage<\/i><span>, an international cheese competition held in Tours, France.<\/span><\/p><p><span>The tart in the photo was created by Chef Shingo Suzuki as an aperitif snack, featuring the atelier\u2019s blue cheese and smoked hard cheese.
